About the Role:

The main purpose of this role will be to assist the Chef de Cuisine/Sous Chef (or any designates) to develop standard recipes which allow the kitchen department to operate at an acceptable cost. Assist Chef de Cuisine/Sous Chef (or any designates) to maximize colleagues productivity in order to minimise payroll costs. Monitor operating costs and take corrective action when necessary to reduce expenses.

Your main duties will include:

1. Organize together with the Chef de Partie shifting in the section with regard to mise enpace production and its service.
2. Take orders from his/her Chef de Partie and carry them out in the correct manner.
3. Responsible for completing the daily checklist regarding mise-en-place and food storage.
4. Together with his/her Chef de Partie write daily wine, dry store, food requisitions and kitchen transfers on the appropriate forms for the approval of Executive Chef/Executive Sous Chef in order to achieve the high stock rotation desired in his/her section.
5. Maintain good colleagues relations and motivate colleagues.
6. Work to the specifications received by the Chef de Partie regarding portion size, quantity and quality as laid down in the recipe index.
7. Attend daily meeting with the Chef de Cuisine and other meetings as requested by the Executive Chef/Executive Sous Chef.
8. Check the main information board regarding changes in any Banquets or other information regarding the organization.
9. Report any problems regarding failure of machinery and small equipment to the Chef de Cuisine and to follow up and ensure necessary work has been carried out.
10. Pass all information to the next shift about functions.
11. Comply to all Jumeirah standards and HACCP guidelines.

About you:

For this role you will need to have:

• Willing to work in a team

• Able to deal with people different nationalities and religions

• Completed kitchen apprentice or chefs training courses for at least one year

• At least three years in a five star International chain hotel

• Should understand how to read recipes and a good knowledge of cooking.

Job Summary
     Prepare ingredients for cooking, including portioning, chopping, and storing food. Pull food from freezer storage to thaw in the refrigerator. Weigh, measure, and mix ingredients according to recipes or personal judgment. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist. Monitor food quality while preparing food. Test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils. Ensure proper portion, arrangement, and food garnish to be served. Serve food in proper portions onto proper receptacle. Use kitchen tools safely and appropriately. Wash and disinfect kitchen area, tables, tools, knives, and equipment. Check and ensure the correctness of the temperature of appliances and food. Notify manager if a product does not meet specifications. Communicate any assistance needed during busy periods.

     Follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications. Ensure uniform and personal appearance are clean and professional. Welcome and acknowledge all guests according to company standards. Speak with others using clear and professional language.
